I have never been into breakfast; even as a child the thought of consuming anything immediately upon waking completely repulsed me. I KNOW breakfast is super important and we are supposed to eat healthy in the morning to kick-start our metabolisms and have energy and blah blah blah but I just don't like it, okay? My poor mother would have to practically pour food down my throat and shove me out the door at the last minute since I would just fall back asleep with my head on the table most mornings. I've never been a morning person and eating just goes with that! My brother would come downstairs chipper as fuck every morning and eat a feast before school while I looked on, murderously. By high school my mom had accepted the fact that I only had tea in the mornings, with the occasional piece of toast.
The new school year is upon us, so I thought I might share with you some quick and easy breakfast ideas that even the pickiest child will enjoy! Here's hoping your mornings go smoothly and happily!
When my mother realized that smoothies were a foolproof way to get food in me that was actually nutritious, our house became smoothie central. You can jam pack fruits and veggies into them and your kids will be none the wiser! I don't drink milk, I've hated it my whole life, so you can sub my nut milk suggestions with dairy milk or yogurt! Here are some of my favorite combos:
Strawberries, blueberries, banana, a splash of OJ, almond milk, and a handful of spinach.
Banana, pineapple, peaches, greek yogurt, squirt of honey.
Kale, blueberries, raspberries, banana and rice milk.
You can even make it into an acai bowl if you get some acai powder and throw some granola on top! The best part of smoothies is that you can just throw whatever you have in your house in there and they'll come out delicious. You can also separate and pre-freeze any fruit you may be using into individual servings for maximum ease.
Not just plain old toasts- jazz it up! Peanut butter and banana! Add some blueberries! Make a smiley face with honey! Avocado toast! Kids love avocado toast, I swear. Goat cheese and fig jam if they're fancy! Ricotta and honey! I am a toast connoisseur. Cream cheese and tomatoes! Cheddar cheese and apple slices! Surely there will be a combo your kids will like.
3. Hard-boiled eggs
Pre-make them, let the kids peel them and dip them in salt. The end. These were key on mornings when I straight up refused to get out of bed. My mother literally had to dress in my sleep my until the fourth grade because I would lay in bed like a rag doll while she pulled my uniform on my body.
4. Breakfast tacos
Scramble up a batch of eggs with a little cheese and toss them in a warm tortilla! Throw in tomatoes and spinach if your kid will let you.
5. Crustless quiche cups
Make them the night before and have breakfast for your whole crew the entire week! Take six eggs, and mix in whatever you want in your quiche. Cheese, ham, spinach, sausage, asparagus; whatever your kids will enjoy! Pour mixture into a muffin tin with paper liners and bake for about 20 minutes. Kids love pretending they are cupcakes and they're tasty and leave a minimal mess!
